A source of pride for Aude, the current owner, whose great grandfather Louis Goualin bought the mill in 1927. “It was my father, also called Louis, who turned the mill into a hotel-restaurant in the 70s.” Having decided to follow in his footsteps, Aude studied hospitality “with a sommelier qualification” says the young woman who gladly shares recommendations with guests.
